Go Swiss with Rosti

(Gluten-free)

Rosti has been called the national dish of German-speaking Switzerland. Rosti is similar to hash browns and is usually topped with cheese. Here is a lower calorie version of the dish.


Ingredients

  • 1 medium baked or steamed potato, chilled

  • 1 tbsp olive oil

  • 1/4 cup chopped onion

  • Salt and pepper to taste


Directions

Shred the potato on a large-holed grater. Heat oil in a small frying pan on medium heat. Add chopped onion and shredded potato. Form into a cake and let cook for about 5 minutes on low. When crust forms, turn carefully. Let cook 5 minutes longer.


Serves 2

Each serving contains about 148 calories, 2 g protein, 7 g fat, 0 mg cholesterol, 20 g carbohydrates, 2 g fiber, and 9 mg sodium.
